Vegan aged cheese and fig salad
Ingredients:75 g lettuce (I used a arugula mix)
60 g lentil couscous
1/3 Fermaggio aged white cheese
Handful walnuts, chopped
Fresh herbs (I used parsley)
Drizzle maple or agave syrup
- In a pan or bowl, add couscous and boiled water (1:1 ratio). Let sit for 5 minutes, then mix using a fork.
- Slice the fig. Add lettuce, couscous and figs to a bowl.
- Crumble the cheese on top.
- Add the walnuts and fresh herbs, and finish with a good drizzle syrup.
