It's hard though creamy and melts when you grate it over your pasta - and the taste is fantastic, lots if umami, sweetness and acidity at once
I cut it up into little triangles and put them in the freezer, so it won't go bad, works wonderfully

Of course we buy the Gondino because of it’s cruelty free aspects- however we would recommend it to everyone ; it tastes better, smells better, melts better , preserves longer and is very versatile to use !
