250 gr linguine lemon
2 red onions
8 garlic cloves, sliced
200 gr oyster mushrooms
200 gr mushrooms
150 g shiitake
100 gr baby spinach
150 gr snack tomatoes
Pepper and salt
10 g parsley + extra
400 ml soy cooking cream
Gondino classic cheese
Cook the pasta while making the sauce.
Fry the red onion in a little oil. Meanwhile, cut the oyster mushrooms, mushrooms and shiitake into small pieces and fry for 5 minutes. Add the garlic, a pinch of salt and pepper. Mix everything well and fry for 5 minutes.
Add the snack tomatoes and fry for 5 minutes.
Mix the baby spinach with the mushroom mixture.
When the spinach has wilted well, add a pinch of lemon pepper, parsley and cream. Mix well and let it simmer (do not boil) over low heat for a few minutes.
divide the pasta and creamy mushrooms on the plates and finish with grated Gondino cheese and parsley.
