Indulge in this Vegan Tiramisu, a classic dessert made plant-based! Using vegan mascarpone, gluten-free ladyfingers, and a rich espresso soak, this dessert is as delicious as the traditional version but completely dairy-free. The combination of creamy mascarpone, the delicate coffee-soaked biscuits, and a dusting of cocoa powder makes for a dessert that's both indulgent and satisfying.

Ingredients:
- 300g Ladyfingers (30 vegan sponge biscuits)
- 450g Vegan mascarpone
- 300ml Coconut cream (only the hard top part)
- 5 tbsp Coconut sugar
- 1 cup Espresso coffee
- 3 tbsp Unsweetened cocoa powder

Prepare the Mascarpone Cream:
In a mixing bowl, combine the vegan mascarpone with the coconut cream and coconut sugar. Whip until smooth and creamy. -
Soak the Ladyfingers:
Dip each ladyfinger into the espresso coffee, making sure they are well-soaked but not soggy. Arrange them in a dish. -
Layer the Tiramisu:
Spoon half of the mascarpone cream mixture over the soaked ladyfingers, smoothing it out with a spatula. -
Add Another Layer:
Repeat the process with another layer of soaked ladyfingers and mascarpone cream. -
Finish with Cocoa Powder:
Dust the top layer with unsweetened cocoa powder. Chill in the fridge for at least 4 hours or overnight for best results.
