Vegan Semifreddo al Torrone

Ingredients:
- 250 ml vegan whipping cream
- 250 g vegan mascarpone or thick vegan cream cheese
- 3 tbsp powdered sugar
- 1 tsp vanilla extract
- 150 g Peanut & Raspberry Torrone, roughly chopped
- 2 tbsp maple syrup or agave
- Pinch of sea salt
Optional Toppings:
- Extra crushed torrone
- Extra crushed and whole almonds
Instructions:
- Prepare the Cream Base: In a large bowl, whip the vegan cream until soft peaks form. In a separate bowl, mix vegan mascarpone, powdered sugar, vanilla, maple syrup, and a pinch of salt until smooth and creamy.
- Fold Together: Gently fold the whipped cream into the mascarpone mixture until light and airy.
- Add the Torrone: Fold in most of the chopped Peanut & Raspberry Torrone, keeping a small handful aside for topping.
- Freeze: Line a loaf tin or small serving mold with parchment paper. Pour in the mixture and smooth the top. Sprinkle extra torrone over the surface. Freeze for at least 6 hours, or overnight, until set but still sliceable.
- Serve: Let the semifreddo sit at room temperature for 5–10 minutes before slicing. Top with crushed and whole roasted almonds to add texture.
