Easy Vegan Aged Cheese Fondue

For the Fondue:
- 100 g Smoked Gondino Vegan Parmesan
- 100 g Classic Gondino Vegan Parmesan
- 1 cup unsweetened plant-based milk
- 2 tbsp extra virgin olive oil
- 1 tbsp cornstarch
- 1 garlic clove, halved
- Freshly cracked black pepper
- Fresh thyme or rosemary
For Dipping:
- 1 loaf focaccia, cut into bite-sized cubes
- Extra virgin olive oil
- Fresh rosemary
- Flaky sea salt
Instructions:
- Prepare the Focaccia Bites: Cut the focaccia into cubes and place them on a baking tray. Drizzle with olive oil and sprinkle with rosemary and flaky sea salt. Bake at 180°C (350°F) for 8–10 minutes until lightly crisp.
- Prepare the Fondue Pot: Rub the inside of a saucepan or fondue pot with the garlic clove to infuse a gentle aroma.
- Melt the Cheeses: Warm the plant-based milk over low heat. Gradually add the grated or finely chopped aged vegan cheeses, stirring continuously until smooth.
- Mix the cornstarch with a tablespoon of cold water and stir it into the fondue to create a silky consistency. Add olive oil, black pepper, and fresh herbs.
- Serve: Transfer the fondue to a serving pot and surround it with the warm focaccia bites. Serve immediately while creamy and hot.
