Ricotta pasta
Recipe by Vegaliano.
Ingredients:
2 to 3 cloves of garlic coarsely chopped
olive oil
Pinch salt and pepper
fresh spinach
1 vegan ricotta
1/2 pack of spaghettone
+ lemon juice and cherry tomatoes
Method:
Boil pasta.
In the meantime, make the ricotta mix by mashing it and combining with garlic and lemon juice + salt and pepper.
In a pan add olive oil and sauté the spinach. Then, add the ricotta mix and pasta water and let it simmer. Add the cooked pasta and mix it all together.
Serve with fresh cherry tomatoes and optional chilli flakes.
